Berliner

I made these really easy Chocolate Centre Berliners this weekend and let me tell you, they were dee-licious! I mean, who doesn’t love a Nutella filled donut – am I right?

First up, I am by no means a baker – as much as I wish I was – however, every now and then I like to dust off my Kenwood Chef and put it to some good use!

These delicious, choc filled donuts were really easy to prep and cooked on the stove chop chop! If you have guests coming around for coffee, treat them to a Berliner. They’ll think you’re the next best thing next to Bree Van de Kamp and you wont have to slave in the kitchen while your guests are there, as these taste great completely cooled down.

Traditional Berliners (AKA German donuts) are filled with jelly or jam, but since I’m a bit of a choc-a-holic, I filled mine with the good stuff – Nutella!

My Berliner balls came out quite a lot bigger than I had planned, so make sure you don’t skimp on the Nutella! I put about half a teaspoon of Nutella in the centre since I din’t have much left, but I should have really put at least a tablespoon in each one, if not more. Next time!

I adapted my Berliners from this recipe, which has the full baking instructions. The only thing I may change next time I make these is to fill the centre of the donuts before frying them so they look more rounded without having holes jabbed into the sides. The other thing that could possibly work even better, is filling the centres with a block or two of chocolate. Ya know, to get that melt-in-your-mouth gooeyness, but I’ll have to try this first and see if it actually works.

To make these super dee-lish Berliners all you need is:

  • 3 cups cake flour and a little extra for dusting
  • 2 eggs
  • 1/3 cup of granulated sugar
  • 175ml buttermilk
  • 85 grams unsalted butter, at room temperature
  • one packet of yeast (about 6 grams)
  • 1 teaspoon of salt
  • 1/2 teaspoon of vanilla extract
  • 1 cup of Nutella (or jelly/ jam/ marmalade)
  • oil for frying

To finish them off you need:

  • brown sugar for dusting
  • 1/2 teaspoon of ground cinnamon

When it comes to frying these bad boys, they really only need a small amount of time to cook through. I made the mistake with my first batch to leave them in too long (5-6 minutes), thinking the centre of the donut might not cook through. But the batch where I cooked them for about 3 minutes came out much better and tastier too.

So yummy!

Now if you’ll excuse me, I’m going to see if any of my Berliners remain so I can enjoy them with a cup of tea this morning.

Let me know if you try this recipe and how your Berliners turned out.
